Sushi is the perfect metro food: neat, stylish, compact, artful, labor-intensive, cosmopolitan and a little exotic. The fact that it's raw fish doesn't hurt, either; that and the specter of chopsticks is more than sufficient to put the rustics and suburbanites screaming back to the land of Walmart. Plus, it's an easy indulgence to fit into a diet; fact is, you'll go broke before you can gorge yourself to death on this stuff.
